Mozzarella Stuffed Chicken

Amazingly easy. Amazingly tasty. Amazingly lean. #winnerwinnerchickendinner





I like to cook these beauties up and either pop them in the freezer for the following week or eat them for the next few days


They're really good when sliced up with a tomato pasta sauce or even on a fajita pizza!



INGREDIENTS


4x Chicken breast

8x Parma ham slices

4x sticks of mozzarella

8x sundried tomatoes



DIRECTIONS


1. Prep oven to 180C


2. Grab your chicken fillet and lay it down on the chopping board so the inner fillet is facing up. Move the inner fillet to the side and make a small insition horizontally towards the meatiest part of the breast. Remember to ask an adult if you get stuck.

Repeat for all the others


3. Carefully create a gap big enough to stuff a piece of mozzarella and a couple of tomatoes in (don't worry if you completely balls it up, you can always wrap it all together with the ham!)


4. Now for the painfully gentle part. Peel two slices of parma ham out of the packet and lay them on the board. Plop the chicken on the ham and carefully roll the ham around


(Just to let you know that no matter how gently you roll the breast, the ham will fall to pieces 9/10 of the time. I used to make this day-in-day-out when I was a butcher, so I know all to well how frustrating these can be)


5. Finally, pop in the oven for around 35 minutes, but make sure you check thoroughly before serving


6. I had mine just with asparagus but feel free to add a load more veg and some potato







And there we go! An easy, high-protein meal that mixes things up nicely
